Ridge gourd is commonly used vegetable in India. In this stuffed ridge gourd recipe, a masala paste is made of roasted peanuts, sesame seeds and other spices. This masala is stuffed into slitted ridge gourd cylinders and cooked till soft along with sliced onions. This stuffed ridge gourd pairs well with biryani or pulka. Make sure to select ridge gourd with more diameter and thinner skin to aid in stuffing.
Makes: 5 pieces of Stuffed Ridge Gourd
Ridge Gourd 1 ( 10 inch long)
Onion 1 large
Cumin Seeds 1/4 tsp
Oil 2 tsps
Salt as required
Raw Peanuts 1 tbsp
Sesame Seeds 1 tbsp
Red Chilli Powder 1/4 tsp
Turmeric Powder a big pinch
Ginger Garlic Paste 1 tsp
Garam Masala 1/2 tsp
Salt to taste
Method of preparation:
Peel, remove ends and thinly slice the onion.
Wash, remove ends, lightly peel and chop ridge gourd into 2 inch long cylinders.
Taste the ridge gourd to make sure its not bitter.
Slit the chopped ridge gourd making a plus sign with its bottom intact.
Apply few pinches of salt to the ridge gourd and leave for 5 – 10 minutes.
Then, wash them under water and reserve for later.
Seperately roast peanuts and sesame seeds until they change color and cool them to room temperature.
Grind the roasted ingredients along with other masala ingredients into smooth thick paste adding enough water.
Stuff the ridge gourd pieces with the prepared ground masala paste.
Heat oil in a wide pan, add cumin seeds and let it change color.
Then add sliced onion, arrange the stuffed ridge gourd pieces and pour the remaining stuffing into the pan.
Cook covered for around 5 minutes until ridge gourd pieces turn soft.
Turn the ridge gourd pieces occasionally and sprinkle few tablespoons of water if the masala gets dried.
Cook covered again till ridge gourd turns soft.
Uncover and fry for couple of minutes and remove from heat.
Serve ridge gourd stuffed with peanuts over plain steamed rice, or with roti or chapathi.
Notes:Make sure to scrape the bottom of the pan to avoid burning of the stuffing.
Suggestions: If ridge gourd feels raw, put back in stove, sprinkle water and cook covered on medium flame till ridge gourd turns soft.
