Poha with Sweetened Banana

16 Jun

Perugulo Atukulu.

Rice is flattened into thin flakes to become poha. It is generally soaked in milk or yogurt and served as breakfast or snack. Here, poha is mixed with yogurt and banana glazed with jaggery is added. This poha has to be served immediately. Use thick poha in this recipe which can stand for a little longer than thin poha.
Makes: 3 Servings

Poha/ Flattened Rice 1 cup
Yogurt 1 1/2 cups
Banana 1 large
Jaggery (grated) 1/2 Cup or to taste
Salt a small pinch
Ghee 1/4 tsp

Method of preparation:

Peel and slice the banana into thin circles.
Heat ghee in a pan, add jaggery and a tbsp of water.
Once jaggery syrup melts and starts to thicken, add banana slices.
Remove from heat and cool to room temperature.

In a bowl, smoothly whisk yogurt, quarter cup of water and salt.

Thoroughly wash poha under running water.
Strain the poha for a minute and add it to yogurt bowl.

Mix yogurt and poha well and add more yogurt if required (in case of thick poha).
Top the poha mixed in yogurt with prepared banana.
Serve poha with sweetened banana as a breakfast.
Notes: Make sure to consume poha instantly else it becomes mushy.

Suggestions: If poha mixture feels thick, stir in few tablespoons of yogurt.
Variations: Banana can be replaced with any fruit. Poha in Milk, Poha in Spiced Yogurt, Tempered Poha.
Other Names: Flattened Rice in Yogurt, Beaten Rice with Banana Topping.
