Bottle Gourd with Sun Dried Wadi

Anapakaya Vada Kura


Bottle Gourd / Lauki 1/4th of small one
Punjab Wadi 3 – 4 pieces
Onion 1
Green Chiles 2
Red Chile Powder 1 tsp
Coriander Powder 1 tbsp
Turmeric Powder a big pinch
Cumin Seeds 1 tsp
Oil 1 tbsp
Cilantro few sprigs
Salt to taste

Method of preparation:

Remove ends, peel, wash and chop bottle gourd into small cubes.
Remove stems, wash and slice green chiles.
Peel and finely chop onion.
Wash and mince cilantro.
Break punjab wadi into small pieces.

Heat oil in a pan, add cumin seeds and chopped onion.
Once onion turns translucent, add broken punjab wadi, chopped bottle gourd pieces, green chiles, red chile powder, coriander powder, turmeric powder and salt.
Stir for a moment and add 2 cups of water.
Bring water to boil and add chopped tomato.
Cook covered till bottle gourd and wadi turns soft.
Garnish with chopped cilantro and serve hot with steamed rice.

Notes: Substitute punjab wadi with any other spicy dried wadi if you wish.
