Ingredients:
Chana Dal 1 – 1 1/4 Cup
Turmeric Powder 1 tsp
Garam Masala 1 tsp
Roasted Coriander Powder 1 tsp
Red Chile Powder 1 tsp
Dry Mango Powder / Amchur Powder 1 tbsp
Cumin Seeds 1 tsp
Green Chiles 3
Curry Leaves 15 – 20
Onion 1 small
Salt to taste
Cilantro few sprigs
Method of preparation:
Wash chana dal under water and boil it along with turmeric powder in 5 – 6 cups of water until just cooked.
Alternatively, pressure cook chana dal in 3 cups of water for 1 – 2 whistles.
Wash, remove stems and slice the green chiles.
Peel and finely chop onion.
Wash and finely chop cilantro.
Heat oil in a sauce pot, add cumin seeds, green chiles and curry leaves.
When cumin seeds change color, add cooked chana dal, red chile powder, roasted coriander powder, garam masala powder, amchur powder and salt.
Mix thoroughly and let it boil for few seconds.
Remove cooked chana dal onto a bowl, garnish with chopped cilantro and onion.
Serve sindhi dal with pakwan.
Notes: Make sure not to make the chana dal mushy. Leave the dal as a whole but completely cooked.
