Tindora Onion Fry

Dondakaya Ullipaya Kura

Ingredients:

Tindora / Tendli 1 cup
Onion 1 large
Green Chiles 5
Turmeric Powder a pinch
Salt to taste

Talimpu:

Urad Dal 1 tsp
Cumin Seeds 1 tsp
Mustard Seeds 1 tsp
Broken Red Chiles 4
Curry Leaves 8
Asafoetida a pinch
Oil 1 tsp

Method of preparation:

Wash, remove ends and chop tindora into quarters.
Wash, remove stems and chop green chiles into quarters.
Peel and chop onion into 2 inch long pieces.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add chopped green chiles, onion, tindora and turmeric powder
Cook covered on low flame for 5 – 8 minutes or until tindora turns soft.
Uncover, add salt and stir fry for a minute.
Serve hot with steamed rice and a dollop of ghee.

Notes: Make sure tindora is just cooked.
