Ingredients:
Plucked Drumstick Leaves 1 1/2 cups
Freshly Scraped Coconut 1 cup
Green Chiles 6 – 8
Ginger 1 inch piece
Turmeric Powder a pinch
Salt to taste
Talimpu:
Chana Dal 1 tsp
Urad Dal 1 tsp
Cumin Seeds 1 tsp
Mustard Seeds 1 tsp
Broken Red Chiles 4
Curry Leaves 8
Oil 1 tsp
Method of preparation:
Clean and thoroughly wash drumstick leaves.
Remove stems, wash and vertically slice green chiles.
Peel and finely chop onion.
Peel and finely chop ginger.
Heat oil in a depp pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles, onion and ginger.
When onion turns translucent, add cleaned drumstick leaves and turmeric powder.
Sprinkle few drops of water and cook covered until drumstick leaves wilt.
Uncover and stir fry for a minute.
Finally stir in scraped coconut and remove from heat.
Serve with steamed rice and ghee or with pulka.
Notes: Make sure to fry drumstick leaves right.
