Spicy Stuffed Bitter Gourd

Ingredients:

Bitter Gourd / Bitter Melon 2
Onion 2 small
Whole Dried Red Chiles 4 – 7
Salt to taste
Oil for deep frying

Method of preparation:

Wash, lightly scrape, remove ends and chop bitter gourd into 3 – 4 inch sized pieces.
Discard hard seeds out of bitter melon if any.
Remove ends, peel and roughly chop onion.
Remove stems and tear red chiles roughly.

Grind onion, red chiles and salt into smooth paste adding sufficient water.
Heat oil in a pan on medium flame, add above paste and fry briefly for couple of minutes until it thickens a bit. Remove onto a bowl and reserve for later use.

Heat oil for deep frying on medium high flame.
Once oil becomes hot without smoking, slowly drop the chopped bitter gourd pieces into hot oil.
Fry until the bitter gourd pieces change color or until they seem to be completely cooked and remove onto absorbent paper.

Stuff the fried red chile onion paste into each of the deep fried bitter gourd piece.
Serve stuffed bitter gourd with steamed rice and a dollop of ghee.

Notes: Make sure to fry the bitter melon right.
