Raw Mango Cashew Curry

Mamidikaya Jeedipappu Kura


Raw Mango 1 small
Cashews 1 cup
Onion 1
Green Chiles 2
Red Chile Powder 1/2 tsp
Cilantro few sprigs
Salt to taste


Urad Dal 1/2 tsp
Mustard Seeds 1/2 tsp
Cumin Seeds 1/2 tsp
Curry Leaves 3
Oil 1 tbsp

Method of preparation:

Soak cashews in water for an hour or two.
Alternatively, raw cashews right from the fruit can be used.
Peel, deseed and chop raw mango into inch sized pieces.
Peel and dice the onion.
Remove stems, wash and slit the green chiles.
Wash and chop cilantro.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles, onion, mango and cashews.
Sprinkle few drops of water and cook covered on low flame until mango is turned soft but not mushy.
Stir in salt and red chile powder.
Saute for a minute, garnish with cilantro and serve with rice or roti.

Notes: Make sure raw mango is not too sour.
