Ridge Gourd 1 small
Gram Flour / Besan 6 tbsps
Red Chile Powder 1/2 tsp
Soda bi carb a pinch
Salt to taste
Oil for deep frying
Method of preparation:
Wash, lightly scrape and chop ridge gourd into thick angular slices.
Mix gram flour, red chile powder, soda bi carb and salt with sufficient water to make thick batter.
Heat oil in a deep frying pan on medium high heat.
Dip each ridge gourd slice in gram flour batter and drop slowly in hot oil.
Repeat until the pan is full.
Fry the slices until golden brown on both sides.
Remove onto absorbent paper and repeat the same with remaining slices.
Notes: You can also add ginger garlic paste to the batter.
