Snake Gourd with Chana Dal

Potlakaya Senagapappu Kura

Ingredients:

Snake Gourd 1 ( app. 12 inch long)
Chana Dal 1/2 – 3/4 cup
Green Chiles 2 – 4
Freshly Grated Coconut 2 tbsps
Salt to taste

Talimpu:

Urad dal 1/2 tsp
Mustard Seeds 1/2 tsp
Cumin Seeds 1/2 tsp
Broken Red Chiles 3
Curry Leaves 8
Oil 1 tsp

Method of preparation:

Soak chana dal in water for around 2 hours.
Wash, remove ends, deseed and chop snake gourd into small pieces.
Remove ends, wash and slit green chiles.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles, soaked chana dal and chopped snake gourd.
Stir fry for few seconds, add half a cup of water and salt.
Cook covered on medium flame until the snake gourd and dal are perfectly cooked.
Finally add grated coconut and remove from heat.
Serve hot with steamed rice.

Notes:
Don’t overcook chana dal.
