Ridge Gourd with Tomato

Beerakaya Tomato Kura


Ridge Gourd 1 small
Tomatoes 3 small
Green Chiles 2
Garlic 3 pods
Ginger 1 inch piece
Red Chile Powder 1/2 tsp
Coriander Powder 1 tbsp
Cumin Powder 1 tsp
Turmeric Powder a pinch
Salt to taste


Urad Dal 1/2 tsp
Mustard Seeds 1/2 tsp
Cumin Seeds 1/2 tsp
Oil 1 tsp

Method of preparation:

Wash, peel and chop ridge gourd into 1 inch pieces (app. 2 cups).
Wash and chop tomatoes.
Remove stems, wash and slit green chiles.
Peel and crush the garlic pods.
Peel and finely chop ginger.

Heat oil in a pan, add all talimpu ingredients in order.
When dal changes color, add green chiles, garlic and garlic.
After a few seconds, add ridge gourd pieces, chopped tomato, red chile powder, coriander powder, cumin powder, turmeric powder and salt.
Cook covered on medium flame until ridge gourd turns soft.
Add little water if required.
Serve hot with steamed rice.

Notes: Garnish with fresh cilantro if you wish.
