Red Potatoes 3
Fresh Peas (shelled) 1 cup
Roma Tomatoes 3
Cumin Seeds 1 tsp
Coriander Powder 1 tsp
Red Chile Powder 1/2 tsp
Turmeric Powder a pinch
Garam Masala 1/2 tsp
Cilantro few sprigs
Salt to taste
Oil 1 tbsp
Method of preparation:
Wash and halve the potatoes.
Boil water, add salt and halved potatoes.
Cook covered until potatoes are soft from inside.
Peel and chop boiled potatoes into small cubes.
Peel and finely chop onion.
Wash and finely chop tomato.
Wash and roughly chop cilantro.
Heat oil in a deep pan, add cumin seeds and chopped onion.
When onion turns light brown, add tomatoes, coriander powder, red chile powder and turmeric powder.
Once tomatoes turn soft, add potato cubes, fresh peas and around a cup of water.
Cook on medium flame until the sauce thickens a bit.
Finally add salt, cilantro and garam masala.
Stir well and serve with rice or roti.
Notes: If using frozen peas, add them at the end.
