Lima Beans Talimpu

Ingredients:

Lima Beans 1 cup
Green Chiles 1
Fresh Coconut (scraped) 2 tbsps
Turmeric Powder 1/2 tsp
Salt to taste

Talimpu:

Urad dal 1 tsp
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Broken red chillies 5
Curry Leaves 8
Oil 1 tbsp

Method of preparation:

Soak lima beans overnight and pressure cook in 2 cups of water for 2-3 whistles.
Remove stem, wash and slice the green chile.

Heat oil in a pan, add all talimpu ingredients in order.
When dal turns light brown, add green chile, lima beans, turmeric powder and salt.
Mix thoroughly and stir fry for a minute or two.
Remove from heat and add fresh coconut.
Serve with rice or as a snack.

Notes:
Alternatively, use canned lima beans (drain and wash) to speed up the process.
