Bendi / Lady’s Finger 10-15
Oil 3 tbsps
Besan 4 tbsps
Coriander Powder 1 1/2 tbsps
Amchur Powder 1 tsp
Red Chilli Powder 1 tbsp
Salt to taste
Method of preparation:
Heat a pan on medium-high, add besan and fry for few seconds.
Then add all other stuffing ingredients and remove from heat.
Mix thoroughly and keep aside.
Wash and pat dry bendi.
Remove ends and slit the stomach keeping its shape intact.
Then halve the bendi breadth wise to ease the stuffing.
Stuff each bendi with above besan stuffing.
Heat oil in a pan medium-low heat, add all the stuffed bendi.
Cook covered for 3-5 minutes or until the bendi becomes soft.
Then remove the lid and fry for few more seconds on high.
Remove and serve with hot rice.
Notes: Make sure not to overstuff the bendi.
