Onion 1 large
Tomato 2 small
Ginger Garlic paste 1 tsp
Coriander Powder 2 tsps
Turmeric Powder a pinch
Red Chilli Powder 1 tsp
Cilantro 20-30 leaves
Cumin Seeds 1 tsp
Mustard Seeds 1/2 tsp
Salt to taste
Oil 1 tbsp
Method of preparation:
Wash and halve the potatoes.
Cook in a closed pot full of water until soft.
Cool them down and peel the skin.
Chop them into somewhat large pieces.
Peel and chop onion roughly.
Wash and chop tomato into small cubes.
Heat oil in a pan, add mustard seeds and cumin seeds.
Then add chopped onion and stir fry until onion turns translucent.
Then add corainder powder and ginger garlic paste.
Briefly fry and add chopped tomato and cook until tomatoes turn soft and mushy.
Add the potato cubes, turmeric powder, red chilli powder and salt.
Mix thoroughly mashing the potato cubes ocassionally and cook for 1-2 minutes.
Finally garnish with chopped cilantro and serve with rice.
Notes: Squeeze a lemon at end for a fresh taste.
