Peanuts 1/2 cup
Coconut (scraped) 4 tbsps
Green Chillies 2
Mustard Seeds 1/2 tsp
Cumin Seeds 1/2 tsp
Cilantro few sprigs
Lemon Juice 1 tbsp
Salt to taste
Oil 1 tbsp
Method of preparation:
Peel, wash, remove ends and halve the cucumbers.
Remove the seeds and finely chop the peeled cucumbers.
Remove stems, wash and finely chop green chillies.
Roast the peanuts in a pan until golden brown and coarsely chop them.
Heat oil in a pan, add mustard seeds and cumin seeds.
When mustard seeds start spluttering, add green chillies and remove from heat.
In a mixing bowl, add chopped cucumbers, peanuts, coconut, lemon juice and above tempering.
Add salt and stir to mix well.
Garnish with finely chopped cilantro and serve immediately.
Notes: Add little bit of sugar if you wish.
