RidgeGourd with Milk

Beerakaya Paalu Posina Kura

Ingredients:

Ridge Gourd 1 medium size
Milk 1/2 cup
Green Chillies 2
Ginger 1/2 inch piece
Turmeric Powder a pinch
Salt to taste

Talimpu:

Chana Dal 1/2 tsp
Urad Dal 1/2 tsp
Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Curry Leaves 5
Oil 1 tbsp

Method of preparation:

Peel, wash, remove ends and chop ridge gourd into small pieces.
Remove stems, wash and finely chop green chillies.
Wash, peel and finely chop ginger.

Heat oil in a pan, add all talimpu ingredients in order.
When chana dal turns light brown, add green chillies and ginger.
Then add chopped ridge gourd, turmeric powder and salt.
Cook covered on medium-low flame for 5-10 minutes or until the ridge gourd becomes soft.
Pour and milk and cook uncovered until all the milk evaporates.
Serve with hot rice and ghee.

Notes: Leave a little bit of skin for crunch if you wish.

    Ridgegourd dish looks good, never cooked with milk before with it, will try.

    I ate this 3 years back when my roommate cooked and I tried once or twice but never got the same taste. May be I will try yours this time. I have ridge gourds in the refrigerator.

    Never tried with milk. Seems v interesting..Also the idea of adding skin for a crunch! umm…
