Plain Yogurt 2 tbsps
Green Chilli 2
Cilantro 10 leaves
Cumin seeds 1 tsp
Lemon Juice 1 tsp
Turmeric Powder a pinch
Salt to taste
Oil 1 tsp
Method of preparation:
Wash and slit green chiles leaving the stem intact.
Wash and finely chop cilantro.
Roast cumin seeds and grind into powder.
Wash, peel and remove the ends of cucumber.
Cut into quarters and remove the seeds.
Cut each quarter into 2 inch long pieces
Sprinkle salt on the cucumber and keep aside for 10 minutes.
Wash cucumber thoroughly and let the excess water drain.
In a mixing bowl, add cucumber pieces, yogurt, roasted cumin powder, turmeric powder and salt.
Heat oil in a small pan, add green chiles and remove after 5-10 seconds.
Add this to above bowl along with chopped cilantro, lemon juice and serve.
Notes: If this cucumber salad is left for a while, it needs more salt before serving.
