Ridge Gourd 1 (around 20-25 1 inch cubes)
Onion 1 large
Sesame Seeds 2 tbsps
Green Chillies 4
Turmeric Powder a pinch
Salt to taste
Urad Dal 1 tsp
Mustard Seeds 1/2 tsp
Cumin Seeds 1/2 tsp
Broken Red Chillies 3
Curry Leaves 4
Oil 2 tsps
Method of preparation:
Wash thoroughly and remove ends of ridge gourd.
Slightly scrape and chop ridge gourd into 1 inch cubes.
Peel and roughly chop onion.
Remove stems, wash and cut green chillies into two.
Grind sesame seeds, green chillies and half of the onion into smooth paste adding water.
Heat oil in a vessel, add all talimpu ingredients in order.
When urad dal turns light brown, add other half of chopped onion, cubed ridge gourd, turmeric powder and salt.
Stir for a few seconds and add the ground sesame paste.
Pour a cup or two of water and cook on medium-low for about 10 minutes or until the ridge gourd gets tender.
Serve with white rice.
Notes: Thicken the sauce and serve with roti.
