Rice Kheer

Biyyam Paramannam

Ingredients:

Raw rice 1/2 cup
Milk 5 cups
Cardamom pods 2, bruised (optional)
Sugar as required

Method of preparation:

Place the rice, milk and cardamom(if using) in a pot and simmer for 30-40 minutes.
Stir occasionally and check to see for the rice to be soft.
When the grains start to break up, remove from heat.
Add sugar as preferred and stir thoroughly to dissolve.
Serve either warm or cold.

Notes: Add nuts (almonds, pistachios, cashews) and raisins if you have.

    I always wondered if we cook the rice and milk like this, what happens to the ganji?

    My mom gave me a tip to prepare this. If its 1 cup of rice we can pressure cook rice or use a microwave rice cooker and replace water with milk (after washing the rice with water)

    while the rice is being cooked, we can heat some milk on the stove till they boil and mix the cooked rice with it. Add jaggery or sugar to this and let it sit on the stove for 5-10 minutes.

    for making a kheer first fry the rice with little ghee. then it will become much delicious

    you can cook this kheer in pressure cooker. it will take only 5 min.
