Ajwain Rice

Cooked Rice 2 cups
Green chillies 2
Ajwain/ Carom seeds 1 tbsp
Chana dal 1 tsp
Urad dal 1 tsp
Mustard seeds 1/2 tsp
Broken red chillies 4
Hing/ inguva a pinch
Salt to taste

Method of preparation:

Remove stems, wash and chop green chillies finely.
With mortar and pestle, slightly crush ajwain, chopped green chillies and salt together.

Heat oil in a pan, add chana dal, urad dal, mustard seeds and broken red chillies.
When mustard seeds start to splutter, add hing/asafoetida.

Then add crushed ajwain and green chillies.
Fry for few seconds before adding cooked rice.
Mix thoroughly and serve hot with plain yogurt.

Notes: Squeeze a bit of lemon if you like.
