Brinjal Stuffed With Garlic

Small Brinjal 4
Garlic Pods 2
Red Chilli Powder 1tbsp
Salt to Taste
Oil 1tbsp

Method of Preparation:

Wash and pat dry brinjals.
Slit the stomach vertically twice leaving the stem intact.

Peel and mash garlic pods with mortar and pestle.
Mix mashed garlic pods, red chilli powder and salt with few drops of oil.
Stuff the mixture into each brinjal carefully.

Heat oil in a pan on medium low, add stuffed brinjal and cook them closed.
Turn each brinjal on other side and let it cook well.
Serve with rice and plain dal.

Notes: If using egg plant chop into 3 inch sections. Rub each section with garlic mixture and cook similarly as above.
