Snake gourd 7 inch section
Green chillies 2
Garlic pods 3
Salt to taste
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Urad dal 1/2 tsp
Broken red chillies 3
Hing/ Asafoetida a pinch
Curry leaves 4
Method of preparation:
Remove stems, wash and chop green chilli finely.
Remove skin and crush garlic.
Cut snake gourd into thin circles.
Boil 1 cup of water, add snake gourd circles and a tsp of salt.
When snake gourd circles become little tender, remove from water and keep aside.
Heat oil in a pan, add crushed garlic, mustard seeds, cumin seeds, urad dal and broken red chillies.
When seeds start to splutter add curry leaves, hing and green chillies.
Then add cooked snake gourd slices and little salt.
Stir fry until the moisure is gone and snake gourd is tender.
Serve with rice and ghee.
Notes: Alternatively, add raw snake gourd slices with little water after talimpu and cook covered.
