Brinjal with Besan

Vankaya Sengapindi Gutthi Kura


Brinjal/ Baingan/ Kathirikai 4
Besan/ Senagapindi 3/4 cup
Red chilli powder 1 tbsp
Salt to taste
Oil 4 tbsps

Method of preparation:

Wash and pat dry brinjals.
Make a crosswise slit in each brinjal making sure the stem is intact.

In a bowl, mix besan, red chilli powder and salt thoroughly with little bit of oil.
Stuff this besan mixture inside each brinjal tightly.

Heat oil in a pan, add stuffed brinjal and cook closed on medium flame.
After 3 minutes, turn them on other side and again cook covered for 3 more minutes.
Now toss the pan slightly and cook them covered until done.

Notes: I like the brinjals well cooked and crisp. You can take them out even earlier.

    Try adding dry coconut powder, garlic paste, haldi and cumin powder to the besan mix. I make in this way.

    i grind fried red chilli,dhaniya,and dal into apowder and add asafoedita and to the powder add little tamarind paste and salt….then stuff in brinjal…and fry on pan…

    today tried this came out nice and tasty…
    take fried gram,what we call pottukadalai in tamil,add afew cumin seeds,salt,red chilli bto taste and two garlicpearls put all in mixie jar and grind to powder ….

    now we can stuff this powder in brinjal and fry ..or
    cut brinjal into pieces fry in oil like any other curry add turmeric powder and then when cooked addthis powder and mix well on the stove for two mins…..and switch off stove and cover the kadai and let cook…..

    can mix with rice and make brijal rice too
