Chayote with Besan

Benguluru vankaya senagapindi kura

Ingredients:

Chayote/ Benguluru Vankaya 1
Besan/ Senagapindi 1/4 cup
Red chilli powder 1 tsp
Salt to taste

Talimpu:

Mustard seeds 1/2 tsp
Urad dal 1 tsp
Broken red chillies 2
Curry leaves 5
Oil 1 tsp

Method of preparation:

Wash and cut chayote into half.
Remove seed and chop into 1 inch sized cubes.

Heat oil in a pan, add all talimpu ingredients in order.
When seeds start to splutter, add chayote cubes and salt.
Cook covered in medium flame for 5 minutes stirring occasionally.
Chayote cubes should yield when done, but not too easily.
Thats when you add besan and red chilli powder.
Mix thoroughly and fry for few seconds.
Serve hot with white rice.

Notes: Chayote can be cut into long stripes for the same recipe.

    Lovely looking dish! I make it like this with Tendli,okra etc.Haven’t tried it Chayote.Thanks for the idea:))

    this dish looks great. do we need to roast besan before adding it? loved ur poha laddu, so yummy πŸ™‚ can i use thin poha? thanks!

    @asha thx then i add ajwain in case of tendli and jeera in case of okra along with besan
    @jyothi thx and sure is lovely πŸ™‚
    @richa u dont have to roast besan richa. you can actually combine besan, red chilli powder before adding so that they mix well. and am glad u liked poha laddu. you can use thin poha but then i suggest u use thick ones.
