Eggplant with Mango

Vankaya mamidikaya kura


Eggplant/ Vankaya 3
Raw Mango 1
Fenugreek Leaves/ menthi aku 10
Green chillies 3
Salt to taste
Turmeric powder a pinch


Mustard seeds 1 tsp
Cumin seeds 1/2 tsp
Urad dal 1 tbsp
Broken red chillies 4
Curry leaves 3
Oil 1 tsp

Method of preparation:

Remove stems and slice green chillies into halves.

Peel the skin of raw mango.
Continue peeling the white flesh inside until you see the seed.
Keep the peeled mango aside.

Remove stems and wash eggplants.
Chop them into inch sized cubes.
Add them to bowl of 1 cup water, sprinkle salt and turmeric powder.
Microwave for 5-10 minutes or cook covered in a vessel until done.

Heat oil in a pan, add all talimpu ingredients in order.
When urad dal turns light brown, add sliced green chillies,
cooked eggplant cubes, fenugreek leaves, peeled mango and salt.
Stir fry for a minute or two and serve.

Notes: Skip methi leaves if you wish. Add peeled mango according to your taste.

    HI Anusha,
    I have one comment about your photos.
    Why do you always prefer to have a dark background for the photos ?
    My knowledge about photography is almost equal to 0
    But some how I feel that May be If you can add light background the photo may look more bright.

    sometimes the photos are very gloomy and we cannot see the receipe properly.

    Please correct me If I am wrong.
    b/w hats off to you patience and hard work you seem to update every day.

    well i have one thing in mind when i take my pics
    “subject”…..nothing else
    i prefer dark cuz i thought it kinda focuses on my subject
    and i dont have to edit in photoshop unlike others
    btw which shots did u find gloomy ?
    and in which u couldnt see the recipe properly?
    these days i couldnt get good sunlight though 😦

    Hey Anusha, U have a great blog. But since u seem to be open for suggestions am writing this. I don’t want to offend you or be rude.

    I second Anu about yr b/g being dark. It definitely looks good. But you can vary it sometimes. Also, I find most of yr photos are in macro mode. Why don’t you try different perspective.. I am saying this, because you take beautiful photos… Y not make it better still?

    I hope that you take this in a positive way 🙂

    hey suganya
    thx a lot for the suggestions.
    i abs. appreciate what you wrote.
    i have many variables though
    i live in small suite right now….with single window.
    i get around 1 hr of sunlight… else its dark inside.
    since we move a lot……i carry very little stuff
    so i manage to take what i make the same day within that 1 hr with few bowls i got.
    getting better……they vl some time. cant wait for that moment too 😉
